The Zidaric family farm is located in the Karst region, just a stone's throw from the Slovenian border. The 170 cows in the barn are fed exclusively with organic hay from the region. Twice a week, Dario Zidarich and his wife Sandra process 300 litres of untreated milk into eight different types of cheese.
Zwei Mal in der Woche macht Dario Zidaric zusammen mit seiner Frau aus je 200 Litern Milch Käse: Frischkäse, pur oder mit Kräutern, wie z. B. Blüten von wildem Fenchel, und Hartkäse. Die festen Käse „Jamar“ (Höhlenkäse), von denen zehn Laibe pro Monat geformt werden, werden vier Monate in der 70 Meter tiefen Grotte unter dem Stall gelagert, in die sie mit dem Seil hinuntergelassen und auch wieder hinaufgeholt werden.
Das Ergebnis begeistert Feinschmecker wie Käsekenner: Der Jamar harmoniert übrigens perfekt zu Honig und Süßwein.
